Day 2 - Vegan for a week

So today, my throat isn't as bad but I have a massive headache. Won't have much of an appetite today.
For breakfast, I cooked a banana (again) and threw in some cornflakes and some almond milk. Tasted good and I even went back for seconds.
For a snack, I had one of my mum's vegan chocolate orange cookies. She literally made up the recipe and they turned out really great. Here is the recipe:
Ingredients:
1/3 cup Olive oil
Juice of one orange
1/3 to 1/2 cup of Brown rice syrup (depends on your taste)
Zest of one orange
1/3 to 1/2 cup of Dark chocolate (depends on your taste)
1/2 tsp Bicarb
Enough flour to make a hardish dough.
Method:
Mix all the wet ingredients together, the gradually add in flour and bicarb. Add in chocolate chips when the dough is mixed. Bake in a hot (180 degree) over for around 15-20 mins or until the cookies are golden brown. Let cool and enjoy!
Lunch wasn't that fun. I got out some 2 minute noodles and cooked them. Couldn't be bothered to have them with anything else so I just had plain 2 minute noodles for lunch.
For dinner, I had regained some of my appetite back. We made a roasted veggie cous cous salad. Here is a picture:

We put lots of beans, peas, roast pumpkins, roast carrots and chickpeas as well as some cous cous. It was really nice.
I wasn't satisfied with that so I just toasted a wrap with brown rice syrup for dessert. It was crunchy and sweet. Very nice
