Day 1 - Vegan for a week

So today is my first vegan day. Woke up with a sore throat and a sniffle. Great start to the week. I wasn't really hungry for breakfast so I cut up a banana, added some home made almond milk and cooked it in the microwave. Doesn't sound appetizing but it tasted good and soothed my throat.

The almond milk was really easy to make. All I had to do was soak 100g of almonds overnight, then blend it up with around 600g of water. Tastes great and is a suitable replacement for cows milk.

For a snack, I just had some peanuts. Peanuts are full of vitamins and minerals. One cup of chopped peanuts contains 35g of protein, 12% of your daily need of calcium, 14% of your daily iron and heaps of other good stuff too.

Being sick, you don't have much of an appetite. I had a small lunch at around 4pm consisting of a toasted wrap. I literally put a little bit of olive oil in the toastie machine, and cooked a wholemeal wrap till it was nice and crisp. Doesn't sound like much but when you've got the cold, you don't need much to satisfy yourself.

For dinner, my family had some amazing, fragrant fried rice with peas, carrot and cauliflower. I sat there, with nothing in my bowl because I really didn't feel like eating. I'll eat that for tomorrows lunch. I did smell good though.

That's it for day 1. I feel fine (besides the fact that I have a sand paper like throat). I didn't feel deprived of not having 1/2 a cup of cows milk in the morning. I have to say, I do have a lot more energy than I would usually when I'm sick. Maybe, its just a coincidence, maybe not. Hopefully, tomorrow, I'm feeling better and might have more of an appetite.
