Plan for next week - Plant based diet

As you may know already, I will be eating a plant based vegan diet for the whole of next week. In this post, I will be planning what I will eat for the following week. Here is my meal plan:

Monday:

Breakfast: Weetbix with muesli and home made nut milk

Lunch: Sandwich/wrap with salad and cashew cheese

Dinner: Fried rice with peas, beans and tofu

Snacks: Egg free home made muffin, milkshake (nut milk), orange and/or banana, nut balls?

Tuesday:

Breakfast: Weetbix with muesli and home made nut milk

Lunch: Sandwich/wrap with salad and cashew cheese

Dinner: Cheese free home made pizza :(

Snacks: Egg free home made muffin, milkshake (nut milk), orange and/or banana, nut balls?

Wednesday:

Breakfast: Weetbix with muesli and home made nut milk

Lunch: Sandwich/wrap with salad and cashew cheese

Dinner: Lentil soup

Snacks: Egg free home made muffin, toasted wrap, orange and/or banana, nut balls?

Thursday:

Breakfast: Toast with peanut butter and/or avocado

Lunch: Salad wrap

Dinner: Ratatouille with rice

Snacks: Egg free home made muffin, milkshake (nut milk), orange, manderin and/or banana, nut balls?

Friday:

Breakfast: Weetbix with muesli and home made nut milk

Lunch: Sandwich/wrap with salad and cashew cheese

Dinner: Pasta with a tomato sauce

Snacks: Egg free home made muffin, milkshake (nut milk), orange and/or banana, nut balls?

Saturday:

Breakfast: Toast with peanut butter and brown rice syrup

Lunch: Veggie spring rolls

Dinner: Minestrone

Snacks: Peanuts, egg free muffin, apple and/or orange and/or banana, nut balls?

Sunday:

Breakfast: Vegan banana pancakes

Lunch: Toasted sandwich of some sort

Dinner: Home made spinach pasta with green beans

Snacks: Peanuts, orange, nut balls?

I will be writing up recipes for the food that I will be eating on the day that I eat it. I am really looking forward to trying new foods and am wondering what it will do to me.
